Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion diced
  • 4 Cloves of Garlic minced
  • 2 Carrots cubed
  • 3 Red Potatoes cubed
  • 1 Can Great Northern Beans drained and rinsed
  • 1 Can Garbanzo Beans drained and rinsed
  • 1 Can Diced Tomatoes with Italian Seasoning
  • 6 Cups Vegetable Broth
  • 1.5 tbsp Oregano
  • 1 tsp Thyme
  • 2 Bay Leaves
  • 1 tsp Lemon Juice

Instructions

  • In Instant Pot, saute onion and garlic in olive oil until browned.
  • Add beans,, carrots, potatoes, veggie broth, and spices
  • Cook on Soup - High Pressure for 5 minutes
  • Quick release steam 10 minutes after timer beeps
  • Add tomatoes and lemon juice and simmer for 5 more minutes
