Ingredients
- 1 tbsp Olive Oil
- 1 Onion diced
- 4 Cloves of Garlic minced
- 2 Carrots cubed
- 3 Red Potatoes cubed
- 1 Can Great Northern Beans drained and rinsed
- 1 Can Garbanzo Beans drained and rinsed
- 1 Can Diced Tomatoes with Italian Seasoning
- 6 Cups Vegetable Broth
- 1.5 tbsp Oregano
- 1 tsp Thyme
- 2 Bay Leaves
- 1 tsp Lemon Juice
Instructions
- In Instant Pot, saute onion and garlic in olive oil until browned.
- Add beans,, carrots, potatoes, veggie broth, and spices
- Cook on Soup – High Pressure for 5 minutes
- Quick release steam 10 minutes after timer beeps
- Add tomatoes and lemon juice and simmer for 5 more minutes
