Ingredients
- 1 tbsp Olive Oil
- 1 White Onion diced
- 4 Cloves of Garlic minced
- 2 Cups Green Lentils (Alternatively use 1 Cup Green Lentils and 1 Cup Split Peas)
- 2 Cups Brown Rice
- 7 Carrots cut into chunks
- 6 Red Potatoes cut into chunks
- 6 Cups Vegetable Broth
- 1 tsp Ground Cumin
- 3 Bay Leaves
Instructions
- In Instant Pot, saute onion and garlic in olive oil until browned
- Add remaining ingredients
- Cook on Manual – High Pressure for 20 minutes
- Quick release steam when timer beeps
- To cool and thin the soup, add ice cubes until the desired temperature or thickness is reached.
